HOMEMADE FLATBREAD FOR WRAPS/GYROS WITH CHICKEN & TZATZIKI SAUCE

This flatbread recipe is super easy to follow if you are out of wraps and would like to make gyros or chicken wraps.

INGREDIENTS:

  • 3 cups all purpose flour
  • 3 tsp yeast
  • 1 1/4 tsp salt
  • 2/3 cup warm water
  • 1/2 cup warm evaporated milk
  • 1 tbsp brown sugar
  • 2 tbsp olive oil

DIRECTIONS:

  1. Combine sugar, yeast, milk and water. Set aside and allow to proof for 10-12 minutes. The mixture will becoming frothy looking in this step.
  2. Combine flour and salt in a bowl. Add  the yeast mixture in small amounts at a time and also the olive oil. Knead for approximately 5 minutes until the dough is soft and smooth. Cover and set aside for roughly 1 hour.
  3. After 1 hour, break the dough into small balls, depending on the size of the flatbread you want. Cover and set aside for 10-15 minutes.
  4. Roll each dough ball until fairly thin. The thinner, the easier it would be to roll when making gyros.
  5. Cook on a grill/pan for a few minutes (1-2 minutes) on each side.
  6. Enjoy your flatbreads!

TZATZIKI SAUCE:

INGREDIENTS:

  • 1 cup grated cucumber
  • 2 tbsp olive oil
  • 1/3 cup plain greek yogurt
  • 1 garlic, grated
  • 1/2 tsp JGM PRODUCTS roasted geera
  • 1/4 tsp JGM PRODUCTS paprika
  • Salt to taste

DIRECTIONS:

  1. Combine all ingredients and mix well.
  2. Add to a blender to get a smoother consistency.
  3. Use sauce in your gyros/wraps.
  4. Enjoy!

NOTE:

  • Ensure juice is properly squeezed out of the cucumber before adding to the yogurt.
  • You can add some spice to the sauce if you wish

CHICKEN FOR GYRO/WRAPS:

INGREDIENTS:

  • 1 leg/thigh and 1 chicken breast, cleaned
  • 1/2 tsp JGM PRODUCTS paprika
  • 2 tsp JGM PRODUCTS all purpose seasoning
  • 1/2 tsp JGM PRODUCTS roasted geera
  • 3-4 cloves garlic, grated
  • 1 tbsp olive oil
  • 2 tbsp greek yogurt
  • Fresh rosemary (as you like)

DIRECTIONS:

  1. Combine all ingredients listed above.
  2. Ensure chicken pieces are properly coated with the marinade
  3. Marinate for at least 2 hours. Ideally it should marinate overnight.
  4. Cook in the airfryer at 392 degrees for 35-40 minutes or according to the instructions on your airfryer. You can also baked at 400 degrees for 30-35 minutes or until properly cooked through

NOTE:

  • I used whole chicken breast and 1 whole leg and thigh in this recipe. After cooking the meat was stripped from the bone and used in the wrap.
