ONE POT CHICKEN AND KALE SPAGHETTI IN A CREAMY TOMATO PASTE SAUCE

INGREDIENTS:

  • 1/2 lb chicken strips
  • 4 oz uncooked spaghetti
  • 1 tbsp vegetable oil
  • 3 tbsp tomato paste
  • 1 tbsp ketchup
  • 4 cups water
  • 1 tbsp sriracha sauce
  • 1/2 cup Parmesan cheese
  • 3 cloves grated garlic
  • 1 tbsp chopped pimento
  • 1 small sliced onion
  • 3 cups chopped kale
  • 1 tsp salt
  • 2 tbsp chopped chive
  • 1/2 tsp JGM Products black pepper
  • 1 tsp JGM Products basil (dry)

METHOD:

  1. Combine water, tomato paste, ketchup and sriracha sauce. Set aside.
  2. Heat oil in skillet over medium heat.
  3. Sauté garlic, pimento and onions.
  4. Add chicken strips.
  5. Cook for 1 min.
  6. Add sauce (prepared in step 1)
  7. Add spaghetti, basil, black pepper and salt. Stir.
  8. Cook for 8-10 mins covered or until pasta is cooked. Stir occasionally to prevent pasta from sticking (add water if necessary).
  9. Add chopped kale, 1 1/2 tbsp chive and Parmesan cheese when the pasta is almost finished cooking.
  10. Mix well to ensure all ingredients are evenly coated with the sauce.
  11. Reduce heat and cook for 1 min uncovered.
  12. Garnish with the remaining chive.
