Chicken Tikka Masala (April 2022)

This recipe using my garam masala blend so I hope you try it soon! It’s only available in Trinidad and Tobago at the moment so be sure to check out the above to find out about locations.

To marinate chicken:
2 large chicken breast, cut into chunks
2 1/2 tsp garam masala
2- 3 tbsp yogurt
1/2 tsp turmeric
1 tsp chili powder
Salt to taste
2 cloves grated garlic
1/2 tsp grated ginger

For sauce:
1 can tomato purée
1 small onion, sliced
2 cloves grated garlic
1/2 tsp grated ginger
2 tbsp avocado oil
2 tbsp butter
1 tsp garam Masala
1/2 tsp chili (can be adjusted)
3/4 cup cooking cream
1/2 tsp brown sugar
Water if needed and salt to taste


1. Combine all ingredients listed below ‘To marinate chicken’. Set aside to marinate for as long as possible.

2. Heat oil in pan. Cook chicken for 2-3 minutes on each side or until all pieces are fully cooked through. Remove from the pan and set aside.

3. Add butter to the same pan. Once melted, sauté the onions, garlic and ginger.

4. Add tomato purée followed by cooking cream, garam masala, sugar and chili powder. Keep the heat on low and let simmer for 2-3 minutes. Add water if necessary to reduce some of the thickness of the sauce. Taste and add salt to your liking.

5. Add cooked pieces of chicken and store to ensure all pieces are coated with the sauce.

6. Garnish with freshly chopped cilantro. Time to eat!
