SARDINE CHOKA

Sardine choka and fried bake is an ultimate breakfast for me on a weekend. It’s a simple dish that many enjoy just as a snack or lunch.

The ingredients are pretty much straightforward and can be used in any quantity you wish.

Here’s my version…

INGREDIENTS:

  • 1 tin sardine
  • 1/2 onion, chopped
  • hot pepper (optional)
  • 2 Chadon beni leaves (culantro), finely chopped
  • chive/green scallion
  • 1 clove garlic grated
  • black pepper
  • tomato, finely chopped
  • lime or lemon juice
  • 1 tbsp olive oil

METHOD:

  1. Drain the liquid from the tin of sardine.
  2. Cut each sardine in half and remove the ‘spine’ and any dark ‘guts’ looking pieces and place in a bowl.
  3. Add all ingredients except the oil.
  4. Mix well.
  5. Heat oil in a pan.
  6. Once hot, add to the bowl with the sardines and other ingredients.
  7. Mix well.
  8. TIME TO EAT!

NOTE:

Adding the hot oil to the sardine is what we refer to as ‘chunkaying’ and add great flavor  to the dish! If you wish to have a healthier version you can eliminate this step.
