STEW FISH

INGREDIENTS:

  • ½ lbs fish, cut into slices
  • 1 small onion, sliced
  • 2 pimentos, sliced
  • 1 tomato, sliced
  • 1/3 cup carrots, sliced
  • 1/3 cup sweet peppers
  • 2 cloves garlic, sliced
  • ½ tbsp ginger, grated
  • 1/3 cup ketchup
  • ¼ cup oyster sauce
  • ¼ tsp dark soy sauce
  • 2 tbsp coconut oil
  • ¼ cup cilantro/chadon beni (chopped)
  • 2 tbsp chives, chopped
  • JGM PRODUCTS All Purpose Seasoning
  • JGM PRODUCTS Garlic Powder
  • JGM PRODUCTS paprika
  • Flour for coating fish
  • Oil for frying

DIRECTIONS:

  1. Add garlic powder, paprika, all purpose seasoning to fish slices. Rub seasoning into each slice.
  2. Coat fish slices with flour. Set aside for a few minutes.
  3. Fry fish until golden brown on each side. Cook time will depend on the thickness of the slices.
  4. In another pot, on low heat, heat coconut oil. Add onion, garlic, pimento, ginger, tomato. Cook for 1-2 minutes.
  5. Add ketchup, oyster sauce and soy sauce. Cook for 1-2 mins.
  6. Add water followed by the carrots and sweet peppers. Cook until carrots and peppers are tender and until there is enough ‘sauce’ for your liking.
  7. Add chopped chives and cilantro followed by fried fish slices.
  8. Simmer for 1-2 minutes.
  9. SERVE WITH RICE OR PROVISIONS
