INGREDIENTS:
- ½ lbs fish, cut into slices
- 1 small onion, sliced
- 2 pimentos, sliced
- 1 tomato, sliced
- 1/3 cup carrots, sliced
- 1/3 cup sweet peppers
- 2 cloves garlic, sliced
- ½ tbsp ginger, grated
- 1/3 cup ketchup
- ¼ cup oyster sauce
- ¼ tsp dark soy sauce
- 2 tbsp coconut oil
- ¼ cup cilantro/chadon beni (chopped)
- 2 tbsp chives, chopped
- JGM PRODUCTS All Purpose Seasoning
- JGM PRODUCTS Garlic Powder
- JGM PRODUCTS paprika
- Flour for coating fish
- Oil for frying
DIRECTIONS:
- Add garlic powder, paprika, all purpose seasoning to fish slices. Rub seasoning into each slice.
- Coat fish slices with flour. Set aside for a few minutes.
- Fry fish until golden brown on each side. Cook time will depend on the thickness of the slices.
- In another pot, on low heat, heat coconut oil. Add onion, garlic, pimento, ginger, tomato. Cook for 1-2 minutes.
- Add ketchup, oyster sauce and soy sauce. Cook for 1-2 mins.
- Add water followed by the carrots and sweet peppers. Cook until carrots and peppers are tender and until there is enough ‘sauce’ for your liking.
- Add chopped chives and cilantro followed by fried fish slices.
- Simmer for 1-2 minutes.
- SERVE WITH RICE OR PROVISIONS
