CURRY CHICKEN PELAU

Pelau is a classic Trini dish! It’s usually made by stewing meat. adding coconut milk. peas, rice, pumpkin, carrots and other ingredients. Curry dishes are also Trini classics so of course the idea of Curry Chicken Pelau came to light. This is not my invention however. It has been around for some time but this recipe is my version of a curry chicken pelau. Enjoy!

INGREDIENTS:

  • 2 lbs chicken pieces
  • 2 1/2 cups parboiled rice
  • 1 cup coconut milk
  • 1 tomato
  • 1 onion
  • green seasoning
  • salt and black pepper to taste
  • 2 tbsp coconut oil
  • 1/8 tsp JGM Products saffron powder
  • 1 tbsp JGM Products roasted geera
  • 3 tbsp JGM Products hot hot curry

TO SEASON CHICKEN:

  • 1 tbsp curry powder
  • 1/2 tsp roasted geera
  • 2 tbsp green seasoning
