If you are looking for a healthy way to use kidney beans, definitely check out this recipe.
INGREDIENTS:
- 1 can kidney beans, rinsed and drained
- 1 can chick peas, rinsed and drained
- 1 cucumber, diced
- 1 small red onion, diced
- 1 tbsp olive oil
- 2 tbsp green seasoning
- 2 tbsp chives, chopped
- Salt and Black Pepper to taste
- Lime juice (as you like)
DIRECTIONS:
- Combine all ingredients.
- Mix well.
- Served chilled
This super simple recipe is a healthy dish to enjoy with grilled fish or chicken. If you don’t have kidney beans, you can use any other type of beans.
If you prefer to use the dried chick peas and kidney beans, soak them overnight and then cook until tender before combining all ingredients.
